Rice is one of the staple foods of more than half of the world's population. Given the importance of rice grain as a food product and as a structural element of the global food security system, the 57th session of the UN General Assembly proclaimed 2004 the international year of rice.
In Russia, rice is not a staple food, but it is widely used along with other cereals, occupying a special place in baby and diet food.
The main rice - producing regions of Russia are Krasnodar and Stavropol Territories, Rostov, Astrakhan, Volgograd and Saratov Regions, Primorsky Territory, the Republic of Dagestan, Kalmykia, Adygea, Kabardino - Balkaria, Chechnya, Ingushetia, Jewish Autonomous Okrug, Kamchatka, Sakhalin.
Most of the rice varieties growing in our country are round grain in shape (length to width ratio 2.5: 1 or less). At the same time, long - grain varieties have been developed by breeders (the ratio of length to width is 3: 1 or more).
